Chapter III · The caves of Combalou

Descending
into the stone

§ p. 20 · Chapter III— The visit —
Alignment of Roqueforts Carles ageing on wooden travets, natural caves of Combalou

By appointment

Behind the shop, a staircase descends towards the fissured rock of Combalou. The fleurines, the natural faults that temper the cave, blow the same fresh air they did in 1927.

Delphine and the team open the doors to interested visitors, professionals, and the press. Visits are arranged, not improvised. A word, a call, and we agree on a time.
